I've done that exercise of trying to establish how systems work within a company and I find it incredibly tiring. I think if you only wanted to know how things are supposed to work it wouldn't be so bad - you could base it on asking questions - but if you want to ascertain how things actually work in practice, then you've got to just let people talk and listen carefully. (Well listen carefully to the relevant bits and try to tune out the rest.)
